Through a gentle simmer, dried hominy blossoms like a savory flower, ready to elevate soups, stews, and the iconic Southwestern and Mexican dish, Pozole (or Posole). Prepared by delicately removing skins after soaking them in mineral lime (cal), this process not only enhances flavor but also unlocks niacin, rendering this minimally processed grain healthier than simple dried corn or cornmeal.
