Rancho Gordo Heirloom Marcella Bean

Marcella beans, grown in California from Italian Sorana seedstock, are a special variety of cannellini bean. Known for their incredibly thin skin and indulgently creamy texture when cooked, they elevate any dish. While you can use them as you would any small white bean, their exceptional quality shines in simple preparations.

These beans are named in tribute to the late Marcella Hazan, a legendary Italian cookbook author. Rancho Gordo founder Steve Sando worked to grow this rare variety after learning it was the bean Marcella missed most from Italy. The result is a heartfelt homage to her legacy and a truly remarkable ingredient.
