White Miso is a sweet, lighter variety of miso. Made from organic soybeans, medium grain rice, and sea salt. West Coast Koji ages their miso with koji (aspergillus oryzae) cultivated on California grown medium grain rice, lending a beautiful bouquet of floral and sweet aromas. It's then blended with cooked soybeans and sea salt and stored for 3 months to age into a beautiful, sweet, and complex umami paste.
White (shiro) miso pairs very well with seafood, lamb, beef, and pork. Try marinading with white miso to enhance your protein choice with a sweet umami flavor. Add it to your favorite recipes including, soups, stews, dressings, dips, and even baked goods for a deeper, rounded flavor.
