Piment d'Ville is grown from the seeds of Piment d'Espelette, a chile pepper hailing from the Basque region in France. It's mild flavor makes it an easy to use, versatile chile powder that is used like black pepper in France.
Smoky Piment d'Ville is made from the same Espelette chiles as the regular PDV. The smoky flavor is a result of adding charred peppers to the dehydrator while the chiles are drying.
Quick ideas for Smoky PDV: use on elote or corn on the cob, season your ground beef for burgers, make a smoky mayo, use in place of smoked paprika.
Boonsville Barn Collective has been growing Piment d'Ville peppers on their farm in Boonville, CA since 2012 and have perfected the growing, drying, and grinding processes for producing chile powders. They got into the farm to jar spice game by our interest in producing California grown Espelette for chefs around the country. Now, we're here to bring it into kitchens of home chefs nationwide!
