The Cake
Individual slice of plush roll cake stuffed inside a dragon fruit mochi! Topped with crème fraîche vanilla whipped cream, pineapple-strawberry jam, and fresh strawberries.
Ingredients:
Roll Cake: Eggs, Honey, Milk, Butter, Flour, Sugar, Pineapple-Strawberry Jam, Crème Fraîche, Heavy Cream, Vanilla, White Chocolate, Salt, Fresh Fruit
Mochi: Sweet Rice Flour, Water, Sugar, Dragon Fruit, Potato Starch
Storage: Keep refrigerated until consumption. Best consumed within 48 hours of pick-up.
The Chef
Japanese-born chef Gemma Matsuyama began her culinary journey in New Jersey, learning from her Italian mother and making cream puffs for her Japanese father. She attended an Italian culinary school at 16 and later worked at a farm-to-table restaurant. In NYC, she specialized in pastry before moving to Los Angeles to start the Pico House food truck and the dessert brand Heavy Cream. She then became the pastry chef at N/Naka until the COVID pandemic. During the pandemic, Gemma collaborated with Tsubaki and Ototo and launched her pop-up Mochi concept, Kimochi.
